Last night was meatloaf, mashed potatoes, and green beans-- DH's favorite, and nice and soft since he had a root canal yesterday.

Tonight, it's leftover mashed potatoes, salad, and a rotisserie chicken. Need something quick since we'll be cleaning and preparing for a busy weekend.

Vegetarian chicken patties, more quinoa, and raw veggies with dip. I'm very lazy this week.

How do you pronounce that? Kee-noah?

Please explain oxymoron, vegetarian chicken patty? the more interesting of the two questions.

Steak with mushrooms. We have chicken about 5 times for every once that we have steak, so the economics of this works out fine. I love a good steak, but Thank God, I love chicken too. It's all good!

I don't know about dinner, but for lunch I had a guest over and we ate curried stuffed green peppers, and peach cobbler a la mode for dessert.

Last night I made Carnitas in the crockpot and served it on soft tortillas & tostada shells with sour cream. cilantro, salsa and shredded lettuce and cheese/Refried beans and Spanish Rice. Delicious... even if I say so myself!

Tonight we are doing Hamburgers on the grill...with wild-rice salad.

Tonight I am making chicken parmesan--this is the first time I've made it more or less from scratch. It sure smells good, I can't wait to dig in.

This stuff. Not terribly healthy, but my husband adores them so I get them once in a while.

Leftover chicken barley soup with homemade bread.

For a snack before church, I had leftover mac & cheese and Kevin had leftover homemade pizza.

I had an early dinner tonight at a birthday party. I had a brat/mustard/lotsa onions, tater salad, and deviled eggs. It's was good.

That's cheating! I have a breadmaker too. It's gathering dust until I figure out what to do with it!

I had a lamb shank with green lentils today, and I shall have the other one tomorrow!

We had my famous red & green enchiladas for dinner last night. Today it will be pizza...although that might be lunch instead of dinner.

Ground beef stroganoff. I might also thaw some frozen spinach and make a spinach souffle or something.
